Pretzel Bites with Honey Mustard Sauce

Pretzel Bite Recipe
vegan, plant-based, refined sugar-free

Ingredients:

Instructions:

Combine yeast with warm water and honey in a large bowl and let sit until the yeast begins to bloom. This will take at least 5 minutes.
Stir in the flour, 1 Tbsp oil, and salt. Knead the dough for 5 minutes. Alternatively, add the ingredients to a bread maker and let the machine knead the dough until it comes together.
Coat a large bowl with 1 Tbsp extra virgin olive oil, add your dough and rotate to coat.
Cover dough with a damp cloth and let sit in a warm place for about an hour.
Preheat oven to 400°F and line a baking sheet with parchment paper.
Bring a large pot of water to a boil.
Once the water is boiling, slowly add the baking soda to the pot (this will bubble up quite a bit so be careful).
Begin to punch down the dough and then start taking off grape sized pieces and rolling into small balls.
Gently place the pretzel bites in the boiling water and let them sit in the water until they float to the top (about 2 minutes).
Scoop out the floating bites with a slotted spoon and place on the parchment-lined baking sheet. Top pretzel bites with coarse salt if desired.
Bake the pretzel bites for 20 minutes, until golden brown.

Chocolate Silk Pie Recipe
vegan, gluten-free, refined-sugar free, plant-based

Pie Crust Ingredients:

1, 15 oz. can Chickpeas (drained and rinsed)
1/4 cup Pure maple syrup or raw honey
4-5 Tbsp Oat or brown rice flour (can also use whole wheat flour if gluten is not an issue)
1 Tbsp Water if needed

Filling Ingredients:

Pie Crust Instructions:

Preheat oven to 325°F and line a pie form with parchment paper.
Add chickpeas, sweetener, and flour to a food processor and process until the ingredients start to form a ball.
If the mixture is not coming together add the water. If the mixture seems too moist, add more flour one tablespoon at a time.
Place dough between two sheets of parchment paper and gently roll out until it is approximately 1/4 inches thick and the circle is large enough to fit in the pie form.
Carefully peel off the parchment on both sides by flipping dough and peeling back the top layer. Then transfer the dough along with the bottom layer of parchment paper on to pie form. At this point you can press the dough into the form, fix any tears with wet fingers, and trim the top.
Alternatively you can press the dough out in a parchment-covered pie for by wetting your hands and gently spreading out the dough to fill in the pie form; make sure it is an even layer in the form.
Prick the bottom with a fork and bake for 15-20 minutes until the crust is browned.
Let cool.
