Mango Pound Cake

Vegan Mango Pound Cake Recipe
vegan, plant-based, refined sugar-free

Ingredients:
Dry:
  • 1 2/3 cups whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Wet:
  • 1/2 cup extra virgin olive oil
  • 1/2 cup maple syrup or honey
  • 2 cups frozen mango cubes
  • 1 tsp pure vanilla extract
  • 1/2 cup plant-based milk
  • 1 tsp apple cider vinegar

Instructions:
  1. Preheat oven to 320°F and line a bread loaf with parchment paper or grease with extra virgin olive oil.
  2. Add dry ingredients to a large bowl and whisk to blend.
  3. Place all wet ingredients in a blender and blend until frozen mango chunks are pureed. 
  4. Pour the wet ingredients to the dry ingredients and mix well.
  5. Carefully pour into the bread pan and bake for 50 minutes. Then remove from oven and let cool before slicing.
