Vegan Refried Beans

Refried Bean Recipe
gluten-free, plant-based, vegan, refined sugar-free

Ingredients:

• 1 Onion, diced
• 2 Garlic cloves, crushed and finely chopped
• 1-2 jalapeño peppers, deseeded and diced
• 1 1/2 tsp Ground cumin
• 1 tsp Salt
• Pepper to taste
• 1/2 cup Water or vegetable broth (no added sugars or oils)
• 4 cups Black beans (2, 14 oz. cans drained and rinsed)
• Juice of one lime or lemon
• 1/4 cup Cilantro

Instructions:

1. In a large skillet, cook onions, garlic, jalapeños, cumin, salt, and pepper over medium heat for 5 minutes until onions become translucent. 
2. Add in the water/broth and let the mixture reduce until only 1-2 tablespoons of liquid remain.
3. Stir in the beans and cook for another 5 minutes.
4. Pour the bean mixture into a food processor, add in the lime/lemon juice and cilantro and process until smooth.
5. Serve with homemade tortilla chips-> cut corn tortillas into triangles and bake for 15 minutes at 375°F.
